Artisan Pizza Dough

Recipe:

-5 cups bread flour
-1 TBLS sugar (or honey)
-2 1/2 tsp coarse kosher salt OR 1 1/2 tsp table salt
-1 tsp yeast 
-2 TBLS olive oil
-1 3/4 cups + 1 TBLS warm water

1. Mix on low speed in Kitchen Aid Mixer for 3 minutes till combined and all flour is wet.
2. Increase the speed to medium and continue mixing an additional 2 minutes. If dough seems to stiff, add more water, a tsp at a time. Dough should be tacky but not sticky. Lightly grease bowl with oil. Form dough into smooth bowl and turn. Cover with clean kitchen towel. Let dough stand 30 minutes. (Can refrigerate overnight, or up to 3 days).
3. Bake at 425°.

*If baking cold dough. Let dough proof in a bowl on counter and come to room temp before using.
